Some people are called to it. If you;re called to it, you can hardly avoid service. If you serve, it's best to be part of a culture or religion that offers training and support. If not, you can learn by hard knocks but that's a lot harder. There's also dangers involved, from trickster, tester, and malevolent spirits.
I was raised very traidtional Catholic. Catholics venerate the ancestors in the form of the Saints and the Poor Souls. Growing up in New Orleans, I was peripherally exposed to African Diaspora practices as well. I didn't seek out those spaces since I present as white, but if you're a certain temperment the ancestors and the Loa take notice of you as you walk around the old parts of town, no matter where you come from or what color your skin.
Euro-based practices such as Wicca also work with the ancestors so there's that as well.
