Interesting examples about Mexico. However, I'm here in the USA so my concerns are about racism in the USA and, more importantly, what I can do about it.

I agree, it's a bit presumptuous for USA-ians to tell Mexicans what to put on their postage stamps.

Another example is a Japanese fill word, used like we'd use "ummm...", that sounds like a racial slur in English. These things are interesting, but irrelevant to facts such as Black people in the USA getting shortchanged on medical care because of the common implicit bias that they don't feel pain like white people do. What Mexicans think or what Japanese say is none of my business. My business is what goes on where I am. I'm a firm believer in take the block out of one's own eye before going after specks in the neighbors' eyes.

If you don't like the term "change in perspective" you can call it something else if you want. There are many examples once one becomes aware of this concept. For example, if you get a new car, you suddenly notice all the other cars of that same make. If your wife gets pregnant, you start seeing other pregnant people around town. If you learn a math disciplne such as calculus or trigonometry or statistics, you start seeing applications everywhere. And if you meet a Black person and become friends or lovers, you start noticing how Black people get a raw deal in the USA -- and, if you're a decent person, you want to do something about it.

In fact, once you become aware of the idea of "change in perspective" you see examples of this! See what I did? Meta-cognition -- how cool is that!
